Slow-cooker Potato Leek Soup

Method

  1. Cook bacon on low-medium heat until fat renders. Brown slightly.
  2. Add chopped leeks; saute until leeks are soft and bacon is crisp.
  3. Drain excess grease and transfer to slow cooker.
  4. Add potatoes, carrot, celery, chicken broth, and water.
  5. Add dillweed, garlic, salt and pepper. Cover and cook 6-7 hours.
  6. 30 minutes before serving, whisk together half-and-half and flour in a medium bowl.
  7. Add mixture to slow cooker and stir; cook another 30 minutes. Serve with cheese.
