Slow-cooker Potato Leek Soup

Ingredients
- 6 slices bacon, chopped
- 2 leeks
- 1 qt chicken broth
- 2 cup water
- 5 medium potatoes, large diced
- 1 cup diced carrots
- 1 cup diced celery
- ½ tsp dillweed
- 1 tsp garlic powder
- 2 cup half-and-half
- ½ cup flour
- Cheddar cheese, shredded
Method
- Cook bacon on low-medium heat until fat renders. Brown slightly.
- Add chopped leeks; saute until leeks are soft and bacon is crisp.
- Drain excess grease and transfer to slow cooker.
- Add potatoes, carrot, celery, chicken broth, and water.
- Add dillweed, garlic, salt and pepper. Cover and cook 6-7 hours.

30 minutes before serving, whisk together half-and-half and flour in a
medium bowl.

Add mixture to slow cooker and stir; cook another 30 minutes. Serve with
cheese.
